(1) "Why don't you take some food with you in case there isn't any up ON the mountain?"
(2) "Why don't you take some food with you in case there isn't any UP the mountain?"
(3) "Why don't you take some food with you in case there isn't any ON the mountain?"
また、以下の説明のように山を縦走するような山行の場合は、up in the mountains も可能だと思います。

There is a mistake. It's a little preposition. "...up the mountain," or, "... in the mountain."

Oh yes! I always say "Prepositions, little words, big trouble!"
If you are 'in' a mountain it means you are inside it.
For example:-
"The cave in the mountain was very dark and cold."
If you are on the mountain it means you are on its surface.
For example:-
"The trees on the mountain were very old."
If you are up the mountain it means you are somewhere on the surface but quite high up.
For example:-
"We climbed up the mountain until we reached the top."
However you can be "in" the mountains. This just means you are somewhere within a group of mountains.
For example:-
"We drove all day in the mountains."
